DESCRIPTION: Spanish Roja has a long history in North America having been introduced to Portland, Oregon prior to 1900. This well-known heirloom varietal has ranked among the top two to three varietals in the US. It is trickier to grow as it appears to be fussier about growing conditions than other Rocamboles are and this is typically truer of its performance in milder winters. Typically, the plant produces medium sized bulbs; however the bulbs can become very large grown in the garden with all the nurturing that is given to smaller cultivations. This is another Rocambole that is good even when eaten raw as it starts with some heat but leaves you with just a pleasant aftertaste. It has become a favourite for garlic connoisseurs and chefs because it lends itself to roasting, producing a mild and sweet flavour with perfect texture.
